A variation of this recipe was suggested to me by a friend, which came to me at just the right time on a day where I was making the family real macaroni and cheese with lunch and decided I would join them in their cheesy indulgences. I was delighted to find how much more I enjoyed this dish then I ever would have enjoyed the real thing. Cheesy goodness without the guilt? Bring it on, baby!
Raw Mac n’ Cheese
2 carrots, shredded
1/4 cup cashews, soaked
1/4 cup nutritional yeast
2 Tbsp. olive oil
1 tsp. garlic powder
1/4 tsp. ground red pepper
1/4 tsp. pink Himalayan sea salt
1-2 Tbsp. water, as needed
Shred carrots, place into a medium sized bowl. Set aside. Blend the cashews, yeast, olive oil, garlic powder, ground red pepper and salt in the food processor slowly adding the water until it becomes a smooth, saucy consistency. Mix cheese sauce into the bowl of carrots until evenly coated and enjoy.
